More about the cultivar

Maracaturra is a hybrid cultivar that is a crossing between Maragogipe and Caturra. Although similar to Pacamara, Maracaturra has a very distinct flavour characteristic with more citrus and tropical fruit notes. It is a rare cultivar known for its large beans, high yields and good quality when grown in the right environment.

How the coffee was produced

Picking

  • The cherries are carefully hand picked by selective picking making sure to only pick the ripest cherries.

De-pulping and removing mucilage

  • The Cherries are de-pulped in the afternoon.

Dry fermentation

  • The parchment coffee, still with all the mucilage left on, is dry-fermented in an open stainless steel tank for about 24 hours.

Washing and grading:

  • The mucilage is washed off the parchment coffee and the coffee is graded by removing the light, floating coffee beans.

Drying

  • After washing the coffee clean, the wet parchment is transported from the wet mill to Peña Blanca town where the coffee is dried under shade on raised beds.
  • During the drying, the parchment is sorted by hand to remove defective beans.

Storage, milling and logistics.

  • After drying, the coffees are stored in air tight grain pro bags.
  • The coffee is vacuum packed in sealed plastic bags before it is exported.

How to brew

Filter

We strongly recommend using the correct measurements and brewing techniques when you brew our coffees. Use a digital scale both to measure water and coffee in order to get consistent results, and we recommend using between 60 to 70 grams of coffee per litre (1000g) of water, depending on the brewing method, water quality and coffee used.

Tim's notes

This is the first time we buy coffee from Angel, but I have known him since 2009 as he was the one facilitating my first visit to Jobneel’s farms Nacimiento and Cielito Lindo. Angel’s family are the owners of San Vicente, a coffee export company in Pena Blanca, Santa Barbara. They are famous for connecting farmers in their community with roasters, and for bringing some of the best coffees in Honduras to the market.

Angel has been working at San Vicente as quality control manager for many years and his passion for coffee is evident not only in his daily work but also when it comes to coffee farming. His farm el Guaco is located right next to Jobneel’s farm Finca el Vikingo, in el Sauce, Santa Barbara. Here Angel is growing a few different cultivars and he has a small and neat setup for fermenting, washing and processing his coffees.

Last year he told me that he had built new raised beds placed under shade at the family mill in Pena Blanca where he is drying all his coffees. This was the last thing he was lacking in order to be able to offer us coffee as he has known for many years that we prefer to buy coffees that are slowly dried in shade as it keeps the green coffee tasting fresh for a longer time.

I was really excited and honoured that Angel wanted to offer us his coffee as there are many buyers who would like to buy his coffees. In my opinion this Maracaturra was one of the best coffees we bought last year and I am so happy that there was enough of it so we are able to send it out to our subscribers. Expect a complex coffee with floral, zesty and tropical fruit notes.

Finca el Guaco

Angel is the 3rd generation of coffee producers and has worked with coffee processing in the San Vicente mill since he was very young. For over 20 years he has worked closely with coffee farmers in the Santa Barbara region, helping them increase quality and finding markets for their exceptional coffees.

In 2007 he bought his first property to make a coffee farm. He planted it with Catuai cultivars and named the farm "La Colmena." Two years later the farm started producing coffee and Angel prepared his first micro-lot of high quality coffee.

Angel has participated in the Cup of Excellence Competition since 2011 and has been among the top producers in the competition winning many awards for his coffees.

In 2018 he bought another property named Finca el Guaco. This is a small farm located in El Dorado, Santa Barbara, where he planted different cultivars of coffee. 2021 was his first harvest from this farm and now the farm is consistently producing top quality and unique coffees.
