March is here and your subscription coffee has just left our roastery. This month, once again I have selected three coffees from the same farm.
Jobneel Caceres Dios owns and runs finca Nacimiento with his wife Fany. They were the first farmers we started working with and buying directly from back in 2009 and since then we have worked together in order to systematically improve their coffees. Today they are considered to be among the best producers in their area, an area that is by many considered to produce the best coffees in Honduras.
This month’s coffees feature two different cultivars and includes one of my all time favourite coffees – giving us lots to taste, compare and enjoy together. You can join me in tasting this month’s selection on YouTube here and learn more about each coffee below.
Nacimiento Pacas – 1st & 4th bag
Flavour notes: Fresh herbs, red berries & stone fruit
Producer: Jobneel Caceres Dios
Harvest: February 2021
Origin: El Cielito, Santa Barbara, Honduras
Process: Washed
Cultivar: Pacas
This Pacas lot is from the beginning of the 2021 harvest. Unlike most years where they start the harvest at the bottom of the farm, this coffee is from both the lowest and the highest altitude which means it has a nice fruity cup profile.
A really sweet and fruity Pacas from one of the best coffee areas in Honduras. Packed with stone fruit and ripe red berry flavours with loads of sweetness and a fresh herbal finish.
Nacimiento Bourbon – 2nd & 5th bag
Flavour notes: Winey, forest berries & floral

Origin: El Cielito, Santa Barbara, Honduras
Process: Washed
Cultivar: Bourbon
This coffee is from quite old Bourbon trees and it has consistently been one of the best tasting coffees from Nacimiento (and one of my all time favourite coffees.)
It has a typical winey fruitiness you can find in the best Bourbon coffees from Central-America, with loads of very ripe red berry flavours with hints of stone fruit, flowers and mango.
Nacimiento Pacas 3rd & 6th bag

Origin: El Cielito, Santa Barbara, Honduras
Process: Washed
Cultivar: Pacas
This is a late harvest lot from Nacimiento which means it is harvested from the higher part of Jobneel’s farm.
The flavour is very expressive and open with loads of stone fruit and winey red berry flavours. Compared to the Pacas lot harvested in February 21, this lot has more intensity of flavour and a slight more complex cup profile.
