How We Make Espresso

Something we get asked often in our espresso bar is how we prepare our espresso.

We strongly recommend using VST filter baskets or other modern precision baskets that allow for more even extractions. They make dialing in espresso easier and help bring out more sweetness, clarity, and balance in every cup.

Using a VST 20g filter basket, we suggest the following brewing parameters:

  • 19–20g freshly ground coffee
  • 25–35 seconds extraction time
  • 42–45g espresso yield (up to 50g for a more diluted and nuanced cup)
  • 93–94°C water temperature

For the best experience, we recommend drinking espresso below 60°C. Using pre-chilled cups can help reach this temperature faster. At lower temperatures, the espresso becomes more balanced and expressive.

Great espresso is the result of many variables working together, from the quality of the coffee and water to grind size, temperature, pressure, and equipment cleanliness. While not every factor can be fully controlled, attention to detail makes a significant difference, and even small adjustments can transform the final cup.

Small changes to your grind size will help you consistently achieve a clean, balanced, and expressive espresso.
