Suaza

During our visit to Colombia in May 2009, we tasted a lot of coffee together with the cuppers at Cooccentral (the co-operative in Garzon, Huila.) After all the tasting, they finally understood what type of coffees we were looking for. The cuppers at the co-operative then started looking for coffee producers that had consistently delivered such coffees over the past years.They found a lot of small lots for us, but very few bigger lots.

Unfortunately their mill is not able to handle smaller lots yet, so they decided to make us a blend of coffee from the different small producers that fit our taste profile. Although we always try to buy coffees traceable back to a single farm, we were struggeling to find enough coffee in Colombia in 2009 due to severe rain damaging a lot of the crops. Therefore we decided to buy the mix of Suaza lots as it tasted great in our blind cupping.

Process: Washed. Sundried on raised drying tables.

Taste description:
Aroma: Sweet smell of red berries and milk chocolate.
Acidity: Winey, berrylike and warm acidity.
Mouthfeel: Fat and juicy. Sweet aftertaste.
Flavour: Juicy coffee with delicate flavours remniscent of ripe red berries.
