Santa Isabel
Santa Isabel is the name of the farm owned and run by Fabio Caballero, the father of Marysabel Caballero. Fabio is one of the pioneers in high quality coffee production in Honduras and has been rewarded several awards over the years for his best coffees. The coffee from Santa Isabel is harvested from Typica and Catuaì trees that are from 70 to 100 years of age. Fabio was almost convinced by his children to uproot the old trees to replace them with new high yielding trees. Fortunately we managed to talk him out of it. Although old trees produce less coffee than younger trees, we have a theory that they also produce more concentrated coffees. (Like in wine production) Fabio also placed 3rd in the SCAA coffee of the year award in 2010 with coffee coming from the old trees at Santa Isabel, so for us it did not make sense to change the plant material on this farm.
Normally Fabio sells his coffee exclusively to certain American roasters, but since we convinced him to keep his beloved old trees, he decided to sell us 5 bags of this wonderful coffee. Therefore we have been waiting to launch this coffee as a little christmas special. Hope you like it.

Process: Ripe cherries are hand picked by local pickers.
The pickers are payed extra to sort ripe cherries from the unripe while they are picking. Sorting is done by simply putting the cherries in separate baskets.
After de-pulping the mucilage is removed with the use of an aqua pulper. Then the parchment is fermented for 12 hours before it is washed using african washing techniques which helps sorting floaters and undeveloped beans from the heavier, more developed coffee. After washing the coffee is dried from 10 to 14 days on cement patios.
Taste description:
Aromas and flavors of cherries and blackberries.
Winey acidity. Concentrated and rich mouthfeel with a fresh and fruity finish.
