During our trip to Brazil in 2009, we met a humble and very dedicated coffee farmer named Eulino.
Mr. Eulino has been growing coffee for over 20 years and is committed to producing high quality coffee at his family run farm. He is personally monitoring and controlling everything from farm input, pruning, picking, processing and drying to ensure that quality is maintained in every step of the production.
This is probably the reason why his coffee was the one we liked the most when we were cupping the very best coffees we came across in Brazil in both 2009 and 2010. Mr. Eulino’s coffee also came in 8th place in the 2010 Brazil Cup of Excellence.
We suspect that the consistency in quality is not only due to Mr. Eulino’s dedication but also to the fact that the farm is located on a very high altitude at 1400 m.a.sl. These altitudes are quite rare in Brazil and is considered high as Brazil is far from Equator and therefore has a cooler climate than Central-America, etc. In addition, the soil is very rich in minerals and the coffee trees are over 30 years of age leaving less coffee berries on the tree. Our theory is that those berries get more energy and therefore yields better quality in the cup.

Origin: Piatá, Chapada Diamantina, Bahia, Brasil.
Growing conditions: 1400 m.a.s. Little use of shade trees. Sandy iron rich soil with mixed gravel, marble and minerals.
Farm size: 15 hectars where 6 hectars is for coffee growing.
Botanical variety: Catuaí
Process: Coffee cherries are hand picked with selective picking methods (not by strip picking that is more common in Brazil). The coffee is depulped and fermented for as little as 12 hours. All floaters are removed. After fermentation the beans are washed and then dried on sement patios for 5-6 days.
Taste description:
Flavours of toffee, milk chocolate and hazelnuts.
Firm acidity. Juicy and sweet mouthfeel.
Refreshing yet short finish with hints of red berries.
